Recipes from Heaven



I am calling this post recipes from Heaven because I found some recipes that my mom had left for me when she passed away in 2004. She loved to cook, she was a cook when she was alive. I also love to cook and wanted to share a few of her recipes with all of you.


This recipe is Milk chocolate oat bars. 

Base: 1/4 cup margarine
1/2 cup brown sugar
2 cups oatmeal
1 egg
1/2 cup chopped walnuts

Filling:

1/4 cup margarine
2 cups icing sugar
1 TBSP custard powder
3 TBSP milk

Glaze:
1 cup chocolate chips
2 TBSP milk

Instructions:

Combine 1/4 cup margarine, brown sugar and egg in a saucepan.
Cook over medium heat until it begins to boil. Remove from heat.
Stir in oats and nuts. Press firmly into tinfoil lined 9-inch pan. Chill.

Cream 1/4 cup margarine and icing sugar
dissolve custard powder in milk and blend into mixture until smooth.
Spread over base and chill 15 minutes.
Melt chocolate chips with milk
spread chocolate glaze over filling
Chill at least 2 hours before serving.




Spicy bran muffins 

1 c. bran
1 c. milk
1/2 c. raisins
2 1/2 c. baking powder (B.P.)
1/4 c. sugar
1 egg
1/4 c. shortening
1 c. flour
1/2 tsp. salt
1 tsp. nutmeg

Instructions;

Combine bran and milk. Let stand until most moisture is taken up. Add egg and shortening. Stir in raisins. Add flour, Baking powder, salt and sugar. Add 1 TBPS. cinnamon and 1 tsp. nutmeg.
Add to bran mixture. Stir only until combined.

Fill greased or lined muffin tins until 2/3 full.
Bake @ moderate heat NOT over 400f.
Bake about 25-30 minutes. Serve hot.
Makes 12 muffins.



Zucchini bread 

Beat together
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla

Stir in 1 c. nuts, 2 c. zucchini, 1 small can crushed pineapple (drained)
Mix in 3 c. flour
2 tsp. baking soda
1/4 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg.

Pour in a greased bread pan. Cook at 350 for about 35-40 minutes. Serve hot.



Chocolate butter pecan squares

1 c. flour
1 1/4 c. sugar
2/3 c. butter
1 c. chocolate chips
2 eggs
1/2 c. sugar
1/2 c. corn syrup
1 TBSP. vanilla
1 c. pecans

Instructions:

Combine flour and sugar and 1/2 c. butter in a bowl. BLEND until crumbly.
Press mix into an 8" pan.
Bake 15 minutes at 350 DO NOT BROWN!!
Combine remaining butter and 1/2 chocolate chips. Melt, stirring constantly.
Cool slightly.
Mix eggs, sugar and corn syrup in a small bowl, until just blended.
Stir in cooled chocolate mixture and vanilla.
Spread evenly over baked crust. Place pecans over top in a decorative manner.
Bake 20-25 minutes at 350 cool on a rack.
Melt remaining chocolate chips. Stir until smooth. Drizzle over pecans.
Chill and cut into squares. Serve.




Chocolate crispy bars 

1/2 c. corn syrup
1/4 c. brown sugar
1 tsp. vanilla
1 c. peanut butter
2 c. rice crispy cereal
1 c. chocolate chips
1 c. corn flakes cereal

Instructions:

In a saucepan heat corn syrup and brown sugar to boiling point.
Add vanilla and peanut butter and mix well.
Add cereal and chocolate chips. Mix well
Press into an 8x8" greased pan.
Let chill, cut into squares and serve.





Fish batter

1 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1/2 c. water

Instructions:

Beat batter until smooth. Dip fish into batter and fry or bake in over at 350 for about 25 minutes.
